S'mores Bars

This week was the annual Vacation Bible School week at the church I grew up in. It's a pretty fabulous week, and it's fun seeing kids make the same fun memories that I made growing up. The last day of the week ends with an ice cream social, which I was asked to make bars for this year. I didn't know what kind to make, so I of course perused trusty ol' Pinterest, and I stumbled upon some s'mores bars that I have been eyeing for quite some time but never had a purpose to make them. This seemed like a good excuse to me! The original recipe can be found here or you can keep reading.



What you'll need:
11 Tbsp butter at room temperature
1/2 cup sugar
1 cup brown sugar
2 eggs
1 1/2 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1/4 tsp cinnamon
2 1/2 cups flour
1 1/4 cups mini marshmallows
1 cup semi-sweet chocolate chunks
3/4 cup semi-sweet mini chips
3 Hershey's bars broken into rectangles
2 packs of honey graham crackers


What you'll do:




 Using a mixer, cream together the butter and sugar. Add the eggs one at a time, mixing after each one. Add the vanilla and mix again. 

In another bowl, combine the flour, baking soda, salt and cinnamon. Mix this into the creamed ingredients a little at a time [or you'll have a heck of a mess].

By hand, stir in 1 cup of the mini marshmallows, as well as the semi-sweet chocolate chunks and mini chips. 

Chill in the fridge for 15 minutes.






Meanwhile, break the graham crackers apart and arrange them in a single layer on a baking sheet as shown here.


 After chilling, scoop spoonfuls of the bar mix onto the graham crackers, much like if you were making cookies. Fill in the gaps until you've used all the bar mix.

Bake at 375 for 6 minutes.
Press the Hershey's rectangles into the dollops of bar mix, then place the remaining 1/4 cup of marshmallows into some of the holes.

Bake for another 7 minutes.

Cool completely then cut.

  2. You're right, they went really fast! We made them the next day for a family reunion too, and they were gone just as quickly! A definite hit for any gathering.
